Every Sunday, Dan and I make a meal list. I don't know about you, but if I don't have a list of dinners to choose from, I'm likely to order a pizza.
I should also warn you that I'm terrible about following recipe directions, but I can at least describe an approximation of what I cooked. I'd also love to hear suggestions!
This is our meal plan for the week!
1. Curried Split Pea Soup
This is a delicious and freezable soup. I made it last week, and vaguely based it off of Alton Brown's Curried Split Pea Soup. In addition to his ingredients, I added red potatoes, cumin, and turmeric. If you're interested in making this, make sure to use yellow split peas; your whole soup will be a beautiful golden color!
We made a huge batch of gumbo over the weekend, and it was maybe the best gumbo Dan and I have ever made!
4. Eggplant Chicken Chili
5. Butternut Squash Chili
Okay so clearly I've been on a chili kick; that's just what happens when the weather turns to fall. I'd originally planned on making a vegetarian chili with eggplant, butternut squash, sweet potatoes, black beans, and kidney beans, but I realized that it wasn't all going to fit in my stew pot. I divided my ingredients into two chilis, adding chicken to one and ground beef to the other.
6. Lemon Sesame Chicken
When Dan and I moved back in together over the summer, we decided to expand our cooking skills. I decided that I wanted to explore Asian cuisine, and Dan wanted to explore Mexican cuisine. This week, I'm going to try a recipe from
7. Ravioli in Oil and Garlic Sauce
This, like frozen pizza, is one of our go-to easy dinners. It's so delicious!
